INGREDIENTS

1 cup uncooked Inland Cape White Rice

2 cups water

1 tbsp butter

1 large onion (chopped)

1 16oz velvet cheese (cut into cubes)

1 can cream of mushroom soup

2/3 cup of milk

1/4 tsp pepper

2 cups fresh broccoli florets

1 cup fine soft bread crumbs

1 tbsp butter melted

COOKING INSTRUCTIONS

Step 1- Heat oven to 350 degrees. Spray 13x9 baking glass dish with cooking spray. Cook rice in water, follow cooking instructions on bag.

Step 2- Meanwhile melt butter in skillet, add onion, stirring occasionally to get crisp-tender. Reduce heat to medium and stir in cheese, soup, milk, and pepper. Cook and stir frequently until cheese is melted.

Step 3- Stir in broccoli and rice to the mixture. Spoon into baking dish. 

Step 4- In a small bowl, mix bread crumbs and 1 tbsp melted butter, sprinkle over rice mixture.

Step 5- Bake uncovered 30-35 minutes or until light brown on top and bubbly around the sides. 

Step 6- Dig in and enjoy!
